This honey is selected by the Cistercian monks of the Abbey Notre Dame du Désert. Located near Toulouse, Sainte-Marie-du-Désert Abbey has been home to Cistercian monks since 1852 and their little jars of honey.
Honey thyme is known to have antiseptic properties. It is highly effective in stimulating digestive functions. In addition, it would allow healing in outdoor use.

The site where the Sainte-Marie du Désert monastery was established was first and foremost the place where, on the threshold of the 12th century, a young woman from the region withdrew to lead a hermit's life. Over time, it became for the local population, a place of Marian pilgrimage placed on the patronage of "St. Mary of the Herm", because of the geographical isolation of the place (a "desert", according to the etymology ). Considered an annex of the parish of Bellegarde Sainte Marie, the chapel which was built there, was destroyed during the French Revolution, as attested by a report of June 16, 1796.
