This thyme honey is harvested by a beekeeper from France whose hives are located in the Pyrenees on the Spanish side.

This honey first selected by the Cistercian monks of the Abbey of Notre Dame du Désert is today the choice of an association for the defense of vulnerable people to whom the monks have entrusted the abbey. Located near Toulouse, the Sainte-Marie-du-Désert abbey housed Cistercian monks between 1852 and 2020.

Thyme honey is known to have antiseptic properties. It is highly effective in stimulating digestive functions. In addition, it would allow healing in outdoor use.

The site where the Sainte-Marie du Désert monastery was established was first and foremost the place where, on the threshold of the 12th century, a young woman from the region withdrew to lead a hermit's life. Over time, it became for the local population, a place of Marian pilgrimage placed on the patronage of "St. Mary of the Herm", because of the geographical isolation of the place (a "desert", according to the etymology ). Considered an annex of the parish of Bellegarde Sainte Marie, the chapel which was built there, was destroyed during the French Revolution, as attested by a report of June 16, 1796.
