Harvests: The harvests are carried out by hand, in boxes, carefully sorting the bunches on the plot so as to only contain perfectly healthy grapes, so as to be able to lower the doses of SO2.

This cuvée was aged in barrels for 6 months, with regular stirring of the fine lees. The malolactic fermentation is complete, thus giving this white microbiological stability while keeping a low SO2 content.
Tasting and Accompaniment: Pale yellow color. Floral nose with notes of citrus and exotic fruits. In the mouth, a nice freshness with citrus aromas. To be enjoyed chilled (10 to 12 ° C) after being aired for half an hour, with grilled fish or in sauce and shellfish. This cuvée can be kept between 2 and 3 years.
"We were arriving in a difficult context for agriculture and we had to face the realities of today's rural world, with questions of an economic nature (how to make a living from the land in our time?) And ethical (what food quality for the products we are going to sell and which would feed our brothers men?).

It was during these dilemmas that we met Pierre Rabhi, and that we were able to really get to the bottom of things.
